In 1823, French scientists extracted Chitosan for the first time from the outer shells of crustaceans. Chitosan is found in the shells of crabs, shrimps and snails, in certain kinds of cheese and also in yeast. Chitosan also exists in small amounts in certain varieties of mushroom.

Chitosan is a nitrogenous polysaccharide, similar to cellulose, found in animals and plants, that cannot actually be digested to generate energy. Some scientists have suggested that Chitosan could bind itself to fat in the digestive tract and that this combination of of Chitosan plus fat then passes through the intestines without being digested.
Several studies propose that chitosan food supplements may contribute to a healthier lifestyle by helping reduce fat absorption.
